Our French client entrusts us with their frozen whole Queen Scallops, sourced from Normandy, for meticulous reprocessing in Vietnam. The project, which began in 2016, has seen a steady increase in volume, showcasing the adaptability and capacity of Vietnam’s extensive workforce to handle sudden surges and supply variability.
The heart of this project lies in its complexity and elegance. The scallops are opened and processed without thawing the meat, a task that demands extreme precision, patience, and an exceptionally high degree of skill.
