Because of their smaller size compared to King Scallops, the Queen Scallops demand an even higher level of intensity and delicacy in their reprocessing. This makes the project not only challenging but also highly interesting.

Our French client entrusts us with their frozen whole Queen Scallops, sourced from Normandy, for meticulous reprocessing in Vietnam. The project, which began in 2016, has seen a steady increase in volume, showcasing the adaptability and capacity of Vietnam’s extensive workforce to handle sudden surges and supply variability.

The heart of this project lies in its complexity and elegance. The scallops are opened and processed without thawing the meat, a task that demands extreme precision, patience, and an exceptionally high degree of skill. This highly labor-intensive process stands as a testament to the dedication and hard work of Vietnamese processors.
